Kimchi is a fermented dish that as time goes by, it turns sour. It is a natural fermenting process. If you don't like sour kimchi, we suggest cooking kimchi to make it into a soup or cook it to make another dish. Check out our recipes page for new recipe ideas.
There are bubbles and bulging of my kimchi container. Why?
Don't worry. It is caused by Champansky effect, a natural effervescence. This is the indication that special fermentation is complete. It is a sign of quality. As the kimchi starts to ferment, carbon dioxide is formed as it is released as bubbles. As fermentation happens more of the natural probiotic is formed.
How long does Kimchi last?
As long as you store kimchi properly inside the fridge, it will never expiry (or go bad). We suggest though, once it turns sour, to cook kimchi to turn into another delicious dish.
